Preparation
- Line an 8x8-inch baking dish with parchment paper for easy removal.
- In a saucepan over medium heat, combine peanut butter and honey. Stir until smooth, about 2-3 minutes.
- In a large bowl, combine rolled oats, rice cereal, and salt.
- Pour the melted peanut butter mixture over the dry ingredients. Stir until evenly mixed.
- If desired, fold in mini chocolate chips or dried fruit.
- Press the mixture into the lined baking dish evenly.
- Let it cool at room temperature for at least 30 minutes. Once set, cut into bars.
Notes
Use natural peanut butter for better binding. Experiment with sweeteners like maple syrup or agave. Add vanilla extract for enhanced flavor. Toast oats beforehand for crunchier bars.
