Ingredients

For the Pancakes

  • 2 whole eggs Binds the ingredients together.
  • 1 cup cottage cheese Adds protein and moisture.

For the Frosting
  • 1 cup full-fat plain Greek yogurt or unsweetened coconut yogurt Forms the creamy topping.
  • 1/4 cup pure maple syrup or raw honey Naturally sweetens the frosting.

Method
 

Preparation
  1. Prepare the cinnamon swirl mixture by whisking all the ingredients together until smooth.
  2. Set aside the swirl mixture in a small Ziploc bag or piping bag.
  3. Make the pancake batter by blending all pancake ingredients in a blender or food processor until just combined.
  4. Allow the batter to rest for 15 minutes to thicken.
  5. Prepare a nonstick skillet or griddle by lightly spraying or rubbing with oil and heating over medium heat.
Cooking
  1. Pour 1/4 cup of pancake batter onto the hot skillet.
  2. Pipe the cinnamon swirl on top of each pancake.
  3. Cook until bubbles appear on the surface, about 2 minutes.
  4. Flip the pancakes and cook for an additional minute.
  5. Repeat with the remaining batter and cinnamon swirl.
Making the Frosting
  1. In a medium bowl, whisk all frosting ingredients together until well combined.
  2. Sweeten the frosting to taste with additional maple syrup or honey, if desired.
Serving
  1. Drizzle frosting over the pancakes and serve immediately.

Notes

For fluffier pancakes, ensure baking powder is fresh. Allowing the batter to rest is crucial for achieving fluffy pancakes. You can customize pancake toppings with fresh fruit or nuts.
