Preparation
- Line the baking dish. Prepare an 8 inch baking dish with parchment paper for easy fudge removal.
- Make cinnamon sugar. In a small bowl, combine coconut sugar and ground cinnamon, setting aside for later.
Cooking
- In a large bowl, add white chocolate chips and shake the cans of sweetened condensed coconut milk.
- Pour the coconut milk over the white chocolate chips and microwave for 90 seconds.
- Stir in ground cinnamon, vanilla extract, and salt, whisking until fully combined.
- Pour the fudge mixture into the lined baking dish, spreading it evenly.
- Sprinkle the prepared cinnamon sugar mixture over the fudge and gently swirl it using a spoon.
- Place in the refrigerator for 1 hour or until firm.
Serving
- Lift the fudge out of the pan using the parchment paper and slice into 16 squares.
- Keep in a sealed container in the refrigerator for up to 3 days or freeze for up to 3 months.
Notes
Use quality white chocolate chips for a creamier texture. Allow the fudge to cool completely before slicing for clean cuts.
