Preparation
- Preheat your oven to 350°F (175°C).
- Grease a 9×13-inch baking pan with butter or line it with parchment paper.
- In a large mixing bowl, whisk together the flour, baking powder, salt, and ground cinnamon.
- In another bowl, cream the softened butter and granulated sugar until light and fluffy, about 2-3 minutes.
- Add the eggs and vanilla extract to the butter mixture, mixing until combined.
- Gradually incorporate the dry ingredients into the wet mixture, alternating with milk until a smooth batter forms.
Cooking
- Spread half of the batter evenly into the prepared baking pan.
- In a small bowl, mix the brown sugar and additional ground cinnamon for the filling.
- Sprinkle the cinnamon-brown sugar mixture over the batter and add nuts if using.
- Spoon the remaining batter over the filling and gently spread to cover.
- Bake in the preheated oven for 25-30 minutes, or until a toothpick comes out clean from the center.
- Let the bars cool in the pan for about 10 minutes before transferring to a wire rack.
Serving
- While the bars are cooling, make the glaze by whisking together powdered sugar, milk, and vanilla extract in a bowl.
- Drizzle the glaze over the cooled bars, allowing it to set slightly.
- Cut into squares and serve warm or at room temperature.
- Consider pairing with fresh fruit or a dollop of yogurt for a well-rounded snack.
Notes
Store any leftovers in an airtight container at room temperature for up to a week. These bars freeze well for up to 2 months.
