Preparation
  1. Rinse 1 cup of long-grain rice under cold water until the water runs clear, then drain well.
  2. In a medium saucepan, combine the rinsed rice, 2 cups of vegetable broth, 1 clove of minced garlic, and ½ teaspoon of salt.
  3. Bring the mixture to a boil over medium-high heat, then reduce the heat to low, cover, and let it simmer for 18-20 minutes until the rice is tender and the liquid is absorbed.
  4. Once cooked, remove the saucepan from heat and keep it covered for an additional 5 minutes.
  5. Fluff the rice with a fork, then stir in the juice of 1 lime and ¼ cup of freshly chopped cilantro.
  6. Serve warm as a delicious side for your favorite dishes.

Notes

Use a non-stick pan to prevent the rice from sticking. For a bolder flavor, sauté the garlic in oil before adding the rice. Substitute lime with lemon for a different citrus twist.
