  3. Combine ingredients: In a food processor or small blender, add olive oil, lime juice, cilantro, honey (or maple syrup), Dijon mustard, cumin, salt, garlic, and any optional ingredients.
  4. Blend until smooth: Process until the mixture is completely smooth with tiny flecks of cilantro visible.
  5. Taste and adjust: Sample the dressing and adjust sweetness, salt, and spice levels.

Notes
