Method
 

Preparation
  1. Pound the chicken using a meat mallet to even out the thickness of the chicken breasts.
  2. In a large glass or ceramic container, combine the juice of 1 lime, lime zest, olive oil, 1/4 cup of the finely chopped cilantro, minced garlic, and kosher salt.
  3. Coat the chicken well on both sides with the marinade and refrigerate for at least 1 hour, or up to overnight, turning halfway for even flavor penetration.
Cooking
  1. Preheat your grill. Oil a grill or grill pan and heat over medium to medium-high heat.
  2. Place the marinated chicken on the grill and cook for about 5 minutes on each side until charred and cooked through.
  3. Remove the grilled chicken and place it on a platter, then squeeze the remaining lime juice over the top.
Serving
  1. Top with the remaining fresh cilantro before slicing and serving.

Notes

Allow the chicken to marinate longer for deeper flavor. Serve with rice or quinoa for a complete meal. Add toppings like avocado or a dollop of sour cream.
