Preparation
- Pound the chicken using a meat mallet to even out the thickness of the chicken breasts.
- In a large glass or ceramic container, combine the juice of 1 lime, lime zest, olive oil, 1/4 cup of the finely chopped cilantro, minced garlic, and kosher salt.
- Coat the chicken well on both sides with the marinade and refrigerate for at least 1 hour, or up to overnight, turning halfway for even flavor penetration.
Cooking
- Preheat your grill. Oil a grill or grill pan and heat over medium to medium-high heat.
- Place the marinated chicken on the grill and cook for about 5 minutes on each side until charred and cooked through.
- Remove the grilled chicken and place it on a platter, then squeeze the remaining lime juice over the top.
Serving
- Top with the remaining fresh cilantro before slicing and serving.
Notes
Allow the chicken to marinate longer for deeper flavor. Serve with rice or quinoa for a complete meal. Add toppings like avocado or a dollop of sour cream.
