- If using jalapeño, remove the seeds, chop finely, and set aside.
Mixing
- In a large mixing bowl, combine the corn, red onion, tomatoes, and red bell pepper.
- Add the chopped cilantro and jalapeño, if using.
- Squeeze fresh lime juice over the mixture and add salt to taste.
- Gently stir to combine all ingredients without mashing them.
Serving
- Serve immediately or let it chill in the refrigerator for about 30 minutes to allow flavors to meld.
Notes
