Method
 

Preparation
  1. Rinse the corn (fresh or canned) and chop the red onion, tomatoes, red bell pepper, and cilantro.
  2. If using jalapeño, remove the seeds, chop finely, and set aside.
Mixing
  1. In a large mixing bowl, combine the corn, red onion, tomatoes, and red bell pepper.
  2. Add the chopped cilantro and jalapeño, if using.
  3. Squeeze fresh lime juice over the mixture and add salt to taste.
  4. Gently stir to combine all ingredients without mashing them.
Serving
  1. Serve immediately or let it chill in the refrigerator for about 30 minutes to allow flavors to meld.

Notes

For best results, let the salsa sit for at least 30 minutes before serving. Store leftovers in the fridge for up to three days.
