Preparation
- Preheat the oven to 350°F (175°C).
- Grease a 9-inch loaf pan with coconut spray or coat with coconut oil.
- In a large bowl, whisk together the whole wheat flour, baking soda, cocoa powder, sea salt, and pumpkin spice.
Cooking
- In another bowl, combine pumpkin puree, shredded zucchini, honey or maple syrup, coconut oil, egg, and vanilla until smooth.
- Whisk in the coconut milk until fully incorporated.
- Add the wet ingredients to the dry ingredients and mix until just combined.
- Gently fold in dark chocolate chips, reserving a few for topping.
- Pour the batter into the prepared loaf pan and bake for 50-60 minutes, or until a toothpick comes out clean.
Serving
- Let the bread cool on a wire rack for about 30 minutes before slicing.
- Slice and serve warm for the best experience.
