Preparation
- Preheat the oven to 350 degrees F and prepare a metal 9x13 inch cake pan with parchment paper and a light spray of cooking spray.
- In a saucepan over low heat, melt 1 cup unsalted butter until smooth.
- Stir in 2.5 cups granulated sugar until the mixture is smooth.
- Remove the mixture from heat and allow it to cool for 5 minutes.
- Mix in 2 tablespoons canola oil and 1 tablespoon vanilla extract.
- Beat in 5 large eggs, one at a time, ensuring each is fully mixed before adding the next.
- Gradually sift in 1 cup all purpose flour, 0.75 cup Dutch process cocoa powder, and 0.75 teaspoon salt, stirring until just combined.
- Gently fold in most of the 8 ounces dark chocolate into the batter.
- Pour the batter into the prepared pan and sprinkle the remaining chocolate chunks on top.
Baking
- Place the pan in the oven and bake for 25 to 30 minutes or until a toothpick inserted comes out with moist crumbs.
- Once baked, sprinkle with flaky sea salt.
- Allow the brownies to cool completely before slicing into squares.
Notes
Allow the butter to cool down slightly before adding eggs to prevent them from cooking. Do not overmix after adding the flour to maintain a light texture.
