Preparation
- Preheat the oven to 350°F and line a large baking sheet with parchment paper.
- In a medium bowl, whisk together the flour, Dutch cocoa, black cocoa, cornstarch, powdered milk, and baking soda.
- In a large bowl, beat together the granulated sugar, salted butter, and salt for 1 minute until light and fluffy.
- Add the whole egg and mix, then add the additional egg yolk, whole milk, and vanilla extract, beating until combined.
- Gradually incorporate the dry ingredients into the wet ingredients until fully blended.
Cooking
- In a separate bowl, beat together the softened cream cheese, powdered sugar, and vanilla bean paste until smooth and creamy.
- Using a cookie scoop, portion the cookie dough, flatten it, and create a well for the cheesecake mixture.
- Place a heaping teaspoon of cheesecake filling into the well and fold the dough around it, sealing the filling inside.
- Place cookies on the baking sheet, spaced apart, and bake for 9 to 11 minutes until edges are set and tops appear matte.
- Allow cookies to cool on the baking sheet for 15 minutes, then transfer to a wire rack to cool completely.
Serving
- Melt the chocolate melting wafers in the microwave and drizzle over the cooled cookies. Allow chocolate to set before serving.
Notes
Chill the cookie dough for about 30 minutes for easier handling. Pair cookies with a glass of milk or coffee.
