Method
 

Preparation
  1. Cook the rice according to package instructions and set aside.
  2. In a food processor, combine parsley, cilantro, garlic, red wine vinegar, olive oil, salt, and pepper.
  3. Blend until smooth.
Combining
  1. Transfer the cooked rice to a large mixing bowl.
  2. Pour the chimichurri mixture over the rice and gently toss to combine.
  3. Serve warm or let cool and serve as a salad.

Notes

For extra flavor, toast the rice in olive oil before adding water. Adjust garlic and spice levels according to your preference.
