Method
 

Preparation
  1. Season chicken with salt, pepper, and Italian seasoning.
  2. Heat olive oil in a soup pot over medium-high heat. Sear chicken for 3-4 minutes on each side until browned.
  3. Remove chicken from the pot and set aside to shred after resting.
Cooking
  1. Melt butter in the same pot.
  2. Add diced onions, carrots, and celery; cook for 5 minutes.
  3. Stir in minced garlic, Worcestershire sauce, hot sauce, and seasonings; cook for an additional minute.
  4. Add chicken broth and shredded chicken, bringing to a gentle bubble.
  5. Simmer partially covered for 15 minutes.
Serving
  1. Add tortellini and cook according to package instructions until tender.
  2. Adjust seasoning if needed and serve hot.

Notes

For best flavor, let the chicken rest after searing before shredding. This locks in juices for moister chicken. Feel free to add seasonal vegetables or use leftover rotisserie chicken for convenience.
