Preparation
- Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.
- Add the onion and sauté until beginning to soften, about 3 minutes.
- Add the chicken, 1 tablespoon of soy sauce, and salt. Cook, stirring occasionally, until the chicken is completely cooked through, about 5 minutes. Remove chicken and onion to a plate.
Sauce Preparation
- In a small bowl, stir together the remaining 3 tablespoons soy sauce, ginger, garlic, honey, rice vinegar, cornstarch, and red pepper flakes until smooth.
Cooking
- In the same skillet, heat the remaining 1/2 tablespoon oil. Add bell pepper and cook for 3 minutes.
- Add broccoli slaw and cook until crisp-tender, approximately 4 to 5 minutes.
- Return chicken and onions to the skillet, add edamame, and pour the soy sauce mixture over the top. Stir to combine.
- Cook for 1 minute to warm through and thicken the sauce.
- Top with mandarin oranges, green onions, and sesame seeds. Serve hot over brown rice or quinoa.
Notes
This Chicken Stir Fry is perfect for meal prep and can be stored in airtight containers for up to four days. It can also be frozen for up to three months. Enhance flavor with a splash of sesame oil or add seasonal vegetables.
