  • 1/4 teaspoon ground black pepper Adds warmth and spice.
  • 1 cup celery, finely diced Introduces crispness and freshness.

Method
 

Preparation
  1. Cook the chicken until fully cooked, with internal temperature reaching 165°F (74°C). Allow to cool.
  2. Cube the cooled chicken into small, bite-sized pieces.
  3. In a large mixing bowl, combine Miracle Whip (or mayonnaise), fresh lemon juice, salt, and pepper.
  4. Whisk the dressing until smooth and well-combined.
  5. Add finely diced celery and chopped fresh pineapple, stirring until evenly coated.
  6. Gently fold in the cubed chicken.
  7. Cover the bowl and refrigerate for at least one hour.
  8. Stir gently before serving.
  9. Serve over soft rolls, flaky croissants, or atop mixed greens.

Notes

Opt for freshly chopped celery and ripe pineapple for better flavor. Avoid overmixing to keep the chicken and fruits intact. For extra tang, consider adjusting the lemon juice to taste.
