Preparation
- Combine the flour, sugar, and salt in a large bowl.
- Add the cubed butter and toss to coat.
- Dump the mixture onto a clean surface and roll the butter into thin sheets using a rolling pin.
- Use a bench scraper to manage the dough while rolling.
- Chill the mixture for 15 minutes in the freezer.
- Remove from freezer and add the buttermilk.
- Mix the dough until it comes together into a ball.
- Divide the dough into two disks, wrap in plastic, and chill in the fridge.
Cooking
- Heat the butter in a large skillet over medium-high heat.
- Add onions, carrots, celery, and garlic, and cook until tender.
- Whisk in flour, salt, pepper, thyme, parsley, broth, and heavy cream.
- Simmer over medium-low heat for 10 minutes until thickened.
- Stir in shredded chicken or turkey and frozen peas, then remove from heat.
Assembling
- Preheat oven to 400 degrees F.
- Roll out one disk of dough into a 12-inch circle.
- Transfer dough to a 9-inch pie pan, trimming excess.
- Fill pie with the prepared filling.
- Roll out the second disk of dough and cover the pie.
- Trim and seal the edges, cutting slits into the top crust.
- Brush with egg wash.
- Bake for 45 minutes or until the crust is golden brown.
- Cool for 10 minutes, cut into slices, and serve.
Notes
To prevent a soggy bottom, let the filling cool before adding to the crust. Use very cold butter for the best crust texture.
