Ingredients
  

Chicken and Coating
  • 4 pieces chicken breasts Cut in half horizontally
  • 1 cup all purpose flour For dredging
  • 2 large eggs Whisked for binding
  • 1 cup bread crumbs For coating
  • 1/2 cup parmesan cheese Grated
  • 1/2 cup panko For extra crunch
  • 1 teaspoon salt To enhance flavor
  • 1/2 teaspoon black pepper To add subtle heat
  • 1 teaspoon italian seasoning For a classic flavor
  • 1 teaspoon garlic powder To add aromatic depth
  • 1 tablespoon olive oil For frying the chicken
Sauce and Topping
  • 2 cups marinara sauce For layering on chicken
  • 1 cup mozzarella cheese Shredded for topping
  • 1/4 cup fresh basil For garnish

Method
 

Preparation
  1. Preheat oven to 425°F and line a large baking sheet with parchment paper.
  2. Cut the chicken breasts in half horizontally to make 4 pieces and optionally pound each breast to about 1/2 inch thickness.
  3. Set up dredging stations: put flour in one shallow bowl, whisk eggs in the second, and combine breadcrumbs, 1/4 cup Parmesan, panko, salt, pepper, Italian seasoning, and garlic powder in the third.
Cooking
  1. Coat the chicken in the flour mixture, dip in the egg mixture, then roll in the breadcrumb mixture until well coated.
  2. Heat olive oil in a skillet over medium-high heat. Cook chicken for 3 to 4 minutes on each side until browned, then transfer to the baking sheet.
  3. Spread about 1/3 cup of marinara sauce on each piece of chicken and top with mozzarella cheese and the remaining Parmesan.
Serving
  1. Bake in the oven for 14 to 20 minutes until cheese is melted and chicken is cooked through, reaching an internal temperature of 165°F.
  2. Remove from oven, garnish with fresh basil, and serve immediately.

Notes

For extra crunch, allow the breaded chicken to sit for a few minutes before frying. Make sure to reheat leftovers in the oven to retain crispiness.
