Method
 

Preparation
  1. Season the chicken: Sprinkle the chicken breasts with garlic powder, kosher salt, and pepper on both sides.
Cooking
  1. Heat 1 tablespoon of olive oil in a large skillet over medium heat.
  2. Place the chicken in the skillet and cook for about 3-4 minutes per side, or until golden brown. Set aside.
  3. In the same skillet, add the remaining olive oil and sauté the minced garlic for about 30 seconds.
  4. Pour in the chicken broth, add Italian seasoning, and scrape the bottom of the pan to deglaze. Simmer until reduced by half.
  5. In a small jug, whisk together the gluten-free flour and milk until smooth. Add to the pan and whisk until the sauce thickens.
  6. Stir in the fresh baby spinach and cook until wilted.
  7. Add the parmesan cheese and mix well until melted.
  8. Return the chicken to the skillet and cook in the sauce for an additional 8-10 minutes until fully cooked through.
Serving
  1. Serve warm, sprinkle with more parmesan cheese if desired, and enjoy.

Notes

For added flavor, marinate the chicken in the seasonings for 30 minutes before cooking. Use fresh spinach for the best flavor and color. Pair with whole grain pasta or quinoa.
