Ingredients

  • 2 cups Diced Potatoes
  • 1 cup Diced Carrots
  • 1 cup Diced Celery
  • 1 cup Diced Onion
  • 1 teaspoon Salt to taste
  • 1 teaspoon Pepper to taste
  • 2 cloves Minced Garlic
For the Cheese Sauce
  • 4 tablespoons Butter
  • 1/4 cup Flour
  • 2 cups Milk
  • 2 cups Shredded Cheddar Cheese for a rich cheesy flavor
For Garnishing
  • 1/4 cup Chopped Green Onion for freshness
  • 1/2 cup Shredded Cheese for additional creaminess
For Protein
  • 2 cups Cooked Shredded Chicken

Method
 

Preparation
  1. Add the broth, potatoes, carrots, celery, onion, minced garlic, salt, and pepper to a large pot.
  2. Bring to a boil and continue to simmer until all vegetables are tender.
Cheese Sauce Preparation
  1. Melt your butter in a skillet.
  2. Whisk in flour, then stir in milk.
  3. Continue whisking until thick and smooth.
  4. Gradually add in your shredded cheese, stirring until smooth and well combined.
Combining Chowder
  1. Add your cheese sauce and shredded chicken to your pot of vegetables.
  2. Whisk everything together until well combined.
  3. Serve and enjoy your chowder on a chilly day.

Notes

Consider adding a splash of hot sauce for an extra kick, and use freshly shredded cheese for optimal melting. Let the chowder sit for a few minutes before serving to develop flavors.
