Preparation
- Grill the chicken until fully cooked, about 6-8 minutes on each side. Allow it to rest, then slice it thinly.
- In a large bowl, combine chopped romaine lettuce, diced avocado, sliced grilled chicken, and Caesar dressing.
- Mix gently to coat the ingredients with dressing.
- Lay a whole wheat tortilla flat and place a generous portion of the salad mixture in the center.
- Sprinkle with grated Parmesan cheese and squeeze lemon juice on top.
- Fold the sides of the tortilla in, then roll it tightly from the bottom up to enclose the filling.
- Repeat with remaining tortillas and filling.
- Serve immediately, or wrap tightly in foil and refrigerate for later.
Notes
Marinate chicken in olive oil and lemon juice for juicier results. For a gluten-free option, swap to gluten-free wraps. Feel free to customize with additional veggies or spices as desired.
