- In a large pot, heat oil over medium heat. Add diced onion and sauté until translucent, about 3–4 minutes.

- Remove chicken, shred it with two forks, and return it to the pot.
- Stir in cream, beans, and corn. Let the soup simmer for another 5 minutes.
- Serve immediately topped with crispy tortilla strips and optional cheese.

For extra flavor, sear the chicken first in the pot before adding other ingredients. Substitute chicken breast with rotisserie chicken for quicker prep time.
