Preparation
  1. In a large pot, heat oil over medium heat. Add diced onion and sauté until translucent, about 3–4 minutes.
  2. Stir in minced garlic and cook for an additional minute until fragrant.
  3. Add the chicken breast and spices. Cook until the chicken is browned on all sides, about 5–7 minutes.
  4. Pour in the chicken broth and bring to a simmer. Let it cook for 10–15 minutes until the chicken is fully cooked.
  5. Remove chicken, shred it with two forks, and return it to the pot.
  6. Stir in cream, beans, and corn. Let the soup simmer for another 5 minutes.
  7. Serve immediately topped with crispy tortilla strips and optional cheese.

Notes

For extra flavor, sear the chicken first in the pot before adding other ingredients. Substitute chicken breast with rotisserie chicken for quicker prep time. Boost flavor by adding a squeeze of lime or diced jalapeños for heat. Use homemade chicken stock for an even richer taste. Prepare tortilla strips in the oven for a healthier version; just brush with oil and bake until crispy.
