Preparation
- Crack all eggs into a medium mixing bowl, then add half and half and a pinch of salt. Whisk vigorously until pale and foamy.
- Let the egg mixture sit for 5 to 15 minutes to allow salt to be fully absorbed.
Cooking
- Heat a small non-stick skillet over medium heat until hot.
- Add butter to the skillet and heat until melted and begins to foam.
- Swirl the skillet to coat the bottom, then pour the egg mixture into the center of the skillet.
- Immediately reduce heat to medium-low.
- Let the eggs cook undisturbed until the edges barely begin to set.
- Using a spatula, gently fold the eggs into themselves until approximately half have set.
- Remove the skillet from heat and add pieces of American cheese to the eggs.
- Continue folding until the cheese has melted and incorporated into the eggs; they should remain creamy.
- Transfer the eggs to plate(s) and serve immediately.
Notes
For best results, whisk well, rest the mixture, and cook on low heat. Consider adding fresh herbs for extra flavor.
