  • 1 tablespoon unsalted butter Adds richness and prevents sticking.
  • 1/2 cup American cheese Melts perfectly to create a creamy texture.

Method
 

Preparation
  1. Crack all eggs into a medium mixing bowl, then add half and half and a pinch of salt. Whisk vigorously until pale and foamy.
  2. Let the egg mixture sit for 5 to 15 minutes to allow salt to be fully absorbed.
Cooking
  1. Heat a small non-stick skillet over medium heat until hot.
  2. Add butter to the skillet and heat until melted and begins to foam.
  3. Swirl the skillet to coat the bottom, then pour the egg mixture into the center of the skillet.
  4. Immediately reduce heat to medium-low.
  5. Let the eggs cook undisturbed until the edges barely begin to set.
  6. Using a spatula, gently fold the eggs into themselves until approximately half have set.
  7. Remove the skillet from heat and add pieces of American cheese to the eggs.
  8. Continue folding until the cheese has melted and incorporated into the eggs; they should remain creamy.
  9. Transfer the eggs to plate(s) and serve immediately.

Notes

For best results, whisk well, rest the mixture, and cook on low heat. Consider adding fresh herbs for extra flavor.
