Method
 

Preparation
  1. Preheat your oven to 400°F and grease a casserole dish with softened butter.
  2. Wash and peel the potatoes, then thinly slice them into rounds about 1/8 inch thick. Soak in cold water.
  3. In a medium saucepan, heat olive oil over medium heat. Add the onion and garlic, seasoning with salt, pepper, and nutmeg. Cook until onions are translucent.
Making the Sauce
  1. Add butter and melt, stirring to mix. Whisk in flour and cook for 30 seconds.
  2. Gradually whisk in milk or cream until smooth, allowing to simmer and thicken before stirring in 1 cup of shredded cheese.
Assembly and Baking
  1. Drain the potatoes and dry them thoroughly.
  2. In the casserole dish, layer the cheese sauce, potatoes, and more cheese sauce until all ingredients are used. Finish with the remaining cheese on top.
  3. Cover loosely with foil and bake for 1 hour and 15 minutes. Remove foil and bake for an additional 15 minutes, or until bubbling.
  4. Let rest for 30 minutes before serving, garnished with chopped chives.

Notes

Use freshly shredded cheese for the best melting quality and flavor. Add a splash of cream for an extra indulgent sauce.
