Preparation
- Preheat your oven to 400°F and grease a casserole dish with softened butter.
- Wash and peel the potatoes, then thinly slice them into rounds about 1/8 inch thick. Soak in cold water.
- In a medium saucepan, heat olive oil over medium heat. Add the onion and garlic, seasoning with salt, pepper, and nutmeg. Cook until onions are translucent.
Making the Sauce
- Add butter and melt, stirring to mix. Whisk in flour and cook for 30 seconds.
- Gradually whisk in milk or cream until smooth, allowing to simmer and thicken before stirring in 1 cup of shredded cheese.
Assembly and Baking
- Drain the potatoes and dry them thoroughly.
- In the casserole dish, layer the cheese sauce, potatoes, and more cheese sauce until all ingredients are used. Finish with the remaining cheese on top.
- Cover loosely with foil and bake for 1 hour and 15 minutes. Remove foil and bake for an additional 15 minutes, or until bubbling.
- Let rest for 30 minutes before serving, garnished with chopped chives.
Notes
Use freshly shredded cheese for the best melting quality and flavor. Add a splash of cream for an extra indulgent sauce.
