Preparation
- Preheat the oven to 400°F (200°C).
- Wash and chop the broccoli into bite-sized florets.
- Rinse and drain the chickpeas, patting them dry with a towel.
- In a mixing bowl, combine broccoli, chickpeas, olive oil, garlic powder, salt, and pepper.
- Toss until everything is evenly coated.
- Spread the mixture out on a sheet pan in a single layer.
Cooking
- Roast in the oven for 20-25 minutes, until broccoli is tender and edges are crispy.
- Sprinkle cheese over the top and return to the oven for an additional 5-10 minutes until cheese is melted.
- Remove from the oven and let cool slightly before serving.
Notes
Let leftovers cool completely before storing in an airtight container in the fridge for up to 3 days. Reheat in an oven or air fryer for best texture.
