Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. Wash and chop the broccoli into bite-sized florets.
  3. Rinse and drain the chickpeas, patting them dry with a towel.
  4. In a mixing bowl, combine broccoli, chickpeas, olive oil, garlic powder, salt, and pepper.
  5. Toss until everything is evenly coated.
  6. Spread the mixture out on a sheet pan in a single layer.
Cooking
  1. Roast in the oven for 20-25 minutes, until broccoli is tender and edges are crispy.
  2. Sprinkle cheese over the top and return to the oven for an additional 5-10 minutes until cheese is melted.
  3. Remove from the oven and let cool slightly before serving.

Notes

Let leftovers cool completely before storing in an airtight container in the fridge for up to 3 days. Reheat in an oven or air fryer for best texture.
