- Chop the roasted red peppers and rinse the spinach. Grate the cheddar cheese and crumble the feta cheese.
- In a bowl, combine the spinach, roasted red peppers, cheddar cheese, and feta cheese. Add garlic powder, salt, and pepper to taste. Mix well.
Cooking
- Drizzle olive oil into a large skillet over medium heat.
- Place a tortilla in the skillet, spread the veggie cheese mixture evenly over half of it, and fold the other half over.
- Grill for about 3–4 minutes per side or until the tortilla is golden brown and the cheese is melted. Use a spatula to flip carefully.
- Continue with the remaining tortillas and filling.
Serving
- Cut the quesadillas into wedges and serve warm with your favorite dipping sauce or toppings.
