Ingredients
  

For the quesadillas
  • 4 pieces Whole wheat tortillas
  • 1 cup Cheddar cheese, grated Melty and rich
  • 1/2 cup Feta cheese, crumbled Tangy and creamy
  • 2 cups Spinach, fresh Rinsed
  • 1/2 cup Roasted red peppers, chopped Sweet and smoky
  • 2 tablespoons Olive oil For grilling
  • 1 teaspoon Garlic powder
  • Salt To taste
  • Pepper To taste

Method
 

Preparation
  1. Chop the roasted red peppers and rinse the spinach. Grate the cheddar cheese and crumble the feta cheese.
  2. In a bowl, combine the spinach, roasted red peppers, cheddar cheese, and feta cheese. Add garlic powder, salt, and pepper to taste. Mix well.
Cooking
  1. Drizzle olive oil into a large skillet over medium heat.
  2. Place a tortilla in the skillet, spread the veggie cheese mixture evenly over half of it, and fold the other half over.
  3. Grill for about 3–4 minutes per side or until the tortilla is golden brown and the cheese is melted. Use a spatula to flip carefully.
  4. Continue with the remaining tortillas and filling.
Serving
  1. Cut the quesadillas into wedges and serve warm with your favorite dipping sauce or toppings.

Notes

For best results, avoid overstuffing quesadillas. Preheat the skillet properly and use room temperature ingredients to ensure optimal melting of cheese. Experiment with different cheeses and add fresh herbs for enhanced flavor.
