Method
 

Preparation
  1. Preheat the oven to 375°F.
  2. In a large skillet over medium heat, brown the ground beef while breaking it up with a wooden spoon.
  3. Incorporate the diced onion, minced garlic, Kosher salt, black pepper, smoked paprika, and dried thyme, and continue cooking until the beef is well-browned.
Cooking
  1. Stir in the diced tomatoes, beef broth, and red pepper paste; bring to a boil then reduce heat and simmer for about eight minutes until the liquid reduces by half.
  2. Remove from heat once the mixture has thickened.
  3. In a baking dish, spread half of the beef mixture; top it with cooked brown rice, diced bell peppers, and half of the cheddar cheese.
  4. Repeat the layers with the remaining beef mixture, and top with the last of the cooked rice, bell peppers, and cheese.
Serving
  1. Place the baking dish in the preheated oven and bake for 30-40 minutes until bubbly and the top is golden brown.
  2. If desired, sprinkle with freshly chopped parsley before serving.

Notes

Customize with your choice of vegetables or spices. Let the dish rest for a few minutes after baking for easier serving.
