Preparation
- Preheat the oven to 375°F.
- In a large skillet over medium heat, brown the ground beef while breaking it up with a wooden spoon.
- Incorporate the diced onion, minced garlic, Kosher salt, black pepper, smoked paprika, and dried thyme, and continue cooking until the beef is well-browned.
Cooking
- Stir in the diced tomatoes, beef broth, and red pepper paste; bring to a boil then reduce heat and simmer for about eight minutes until the liquid reduces by half.
- Remove from heat once the mixture has thickened.
- In a baking dish, spread half of the beef mixture; top it with cooked brown rice, diced bell peppers, and half of the cheddar cheese.
- Repeat the layers with the remaining beef mixture, and top with the last of the cooked rice, bell peppers, and cheese.
Serving
- Place the baking dish in the preheated oven and bake for 30-40 minutes until bubbly and the top is golden brown.
- If desired, sprinkle with freshly chopped parsley before serving.
Notes
Customize with your choice of vegetables or spices. Let the dish rest for a few minutes after baking for easier serving.
