Ingredients
  

For the crust
  • 1.5 cups graham cracker crumbs Provides a buttery and crunchy base.

For the filling
  • 16 oz cream cheese, at room temperature The star ingredient for creaminess.
  • 1 cup granulated sugar Sweetens the filling.
  • 1 teaspoon vanilla extract Adds depth of flavor.
  • 3 large eggs Binds the filling.
For the topping
  • 1/4 cup granulated sugar Sweetens the topping.
  • 1 teaspoon ground cinnamon Adds spice to the topping.
  • 2 tablespoons unsalted butter, melted Add richness to the topping layer.

Method
 

Preparation
  1. Preheat the oven to 350 degrees F (175 degrees C).
  2. Grease a 9×13-inch baking dish.
  3. In a medium bowl, combine graham cracker crumbs, melted butter, 1/4 cup sugar, and salt.
  4. Firmly press the mixture into the bottom of the prepared baking dish.
  5. In a large bowl, beat cream cheese until smooth.
  6. Mix in 1 cup sugar, vanilla extract, and eggs until thoroughly combined.
  7. Pour the cream cheese mixture over the crust, spreading evenly.
  8. In a small bowl, mix 1/4 cup sugar and ground cinnamon.
  9. Evenly sprinkle the cinnamon-sugar mixture over the cheesecake layer.
Baking
  1. Bake for 30-35 minutes, until the edges are set and the center is slightly jiggly.
  2. Allow to cool at room temperature for 30 minutes.
  3. Refrigerate for at least 2 hours to set completely.
  4. Drizzle melted butter over the top and sprinkle with additional cinnamon sugar if desired.
  5. Cut into bars and serve.

Notes

For best results, use room temperature cream cheese. Add flavored extracts for a twist and keep chilled until serving.
