Preparation
- Preheat the oven to 350 degrees F (175 degrees C).
- Grease a 9×13-inch baking dish.
- In a medium bowl, combine graham cracker crumbs, melted butter, 1/4 cup sugar, and salt.
- Firmly press the mixture into the bottom of the prepared baking dish.
- In a large bowl, beat cream cheese until smooth.
- Mix in 1 cup sugar, vanilla extract, and eggs until thoroughly combined.
- Pour the cream cheese mixture over the crust, spreading evenly.
- In a small bowl, mix 1/4 cup sugar and ground cinnamon.
- Evenly sprinkle the cinnamon-sugar mixture over the cheesecake layer.
Baking
- Bake for 30-35 minutes, until the edges are set and the center is slightly jiggly.
- Allow to cool at room temperature for 30 minutes.
- Refrigerate for at least 2 hours to set completely.
- Drizzle melted butter over the top and sprinkle with additional cinnamon sugar if desired.
- Cut into bars and serve.
Notes
For best results, use room temperature cream cheese. Add flavored extracts for a twist and keep chilled until serving.
