  • 1 head cauliflower The main ingredient providing mild flavor and crunch.
  • 1/2 cup plant milk Acts as a binding agent.
  • 1/2 cup cornstarch Helps create a crispy batter.
  • 1 teaspoon sea salt Enhances flavor.
  • 1/2 teaspoon ground black pepper Adds subtle spiciness.
  • 1 teaspoon garlic powder Provides aromatic flavor.
  • 1 cup gluten free bread crumbs Creates a satisfying crunch.
  • 1 tablespoon sriracha Adds heat and flavor.
  • 1 tablespoon maple syrup or agave Balances the heat.

Method
 

Preparation
  1. Preheat the oven to 450℉/232℃ and grease a cookie sheet.
  2. In a bowl, mix plant milk, one teaspoon of sea salt, one teaspoon of black pepper, and garlic powder. Add cornstarch gradually while whisking to prevent lumps.
  3. Remove cauliflower florets from the stem and chop them into smaller bite-sized pieces.
  4. Toss the cauliflower in the seasoned batter until fully coated.
  5. In a separate bowl, season the breadcrumbs with the remaining half teaspoon of sea salt and half teaspoon of black pepper.
  6. Coat the battered cauliflower in the seasoned breadcrumbs until well covered.
  7. Spread the coated cauliflower bites on the greased cookie sheet and optionally spray with cooking spray for crispiness.
Baking
  1. Bake in the preheated oven for 18-20 minutes or until golden brown.
  2. Remove from the oven and serve immediately with Sweet Sriracha Sauce.

Notes

For crispier bites, space them out on the cookie sheet. Letting the battered cauliflower sit before coating can improve adherence. Pair with various dipping sauces for enhanced flavor.
