Baking
- Gradually add the dry ingredients to the wet mixture, mixing until just combined. Avoid overmixing.
- Fold in the freshly grated carrots, ensuring they’re evenly distributed.
- Pour the batter into your prepared baking dish, smoothing the top.
- Bake in your preheated oven for 25-30 minutes or until a toothpick inserted in the center comes out clean.
- Let it cool completely in the pan before frosting with cream cheese mixture.
Frosting & Serving
- While the bars cool, prepare the cream cheese frosting by beating the softened cream cheese and egg yolk until smooth.
- Spread the frosting generously over the cooled bars.
- Cut into squares and serve.
Notes
For best results, use room temperature butter and eggs. Freshly grated carrots provide maximum moisture and flavor. You may substitute with coconut sugar for a healthier option. Ensure bars cool completely for easier frosting application.
