For the Frosting
  • 8 oz softened cream cheese The base for a rich and creamy frosting.

  • 2 cups powdered sugar Sweetens the frosting and gives it structure.
  • 1 tsp vanilla extract Enhances the frosting flavor.

Method
 

Preparation
  1. Preheat the oven to 350°F and line a 9×9-inch pan with parchment paper.
  2. In a mixing bowl, whisk together the flour, cinnamon, salt, nutmeg, ginger, cloves, and allspice until well mixed.
  3. In another bowl, whisk the brown sugar and melted butter together until smooth.
  4. Whisk in the eggs, one at a time, followed by the vanilla extract.
  5. Fold in the dry ingredients and grated carrots until just combined.
Cooking
  1. Pour and spread the batter evenly in the prepared pan.
  2. Bake for approximately 18-20 minutes or until a toothpick inserted in the center comes out clean.
  3. Allow the bars to cool completely in the pan before frosting.
Frosting
  1. For the frosting, beat together softened cream cheese and unsalted butter until smooth.
  2. Gradually add powdered sugar, vanilla, and a pinch of salt, mixing until creamy.
  3. If too thick, add a splash of milk to reach the desired consistency.
Serving
  1. Spread frosting over the cooled bars and garnish with cinnamon or chopped walnuts as desired.
  2. Cut the bars into squares and serve.
