Method
 

Preparation
  1. Lightly spray or rub a 12-inch quiche baking dish with olive oil or avocado oil to prevent sticking.
  2. Preheat the oven to 350 degrees F.
  3. In a large mixing bowl, whisk the eggs together with the milk and oat flour.
Cooking
  1. Stir in the mozzarella cheese, garlic, and season with sea salt and pepper to taste.
  2. Transfer the egg mixture into the prepared baking dish and bake for 15-20 minutes, or until it just begins to set.
  3. Carefully remove from the oven, top with tomato slices and fresh basil.
  4. Return the dish to the oven and bake for another 10-15 minutes, or until the eggs are fully set and golden and the tomatoes are roasted.
  5. Allow to cool for 5 minutes before serving.
  6. Sprinkle with fresh basil and serve.

Notes

This quiche keeps well and can be stored in the fridge for up to three days. It's versatile for meal prep and can be frozen for up to three months.
