Method
 

Preparation
  1. Preheat your oven to 350 degrees F.
  2. Add the oil to a large oven-proof skillet over medium heat.
  3. Add thinly shredded cabbage and cook, stirring frequently for about 8-10 minutes.
  4. Incorporate sliced onion and shredded carrots, seasoning with sea salt and pepper.
  5. In a bowl, whisk together the eggs, pressed garlic, oat flour, and shredded cheddar.
  6. Once the veggies are tender and golden, pour the egg mixture over them and stir gently.
Cooking
  1. Spread the frittata mixture evenly in the skillet and reduce heat to medium-low.
  2. Cook for about 4 minutes to form a golden crust on the bottom.
  3. Transfer the skillet to the preheated oven and bake for 12-15 minutes, or until eggs are completely set in the center.
  4. Allow the frittata to cool slightly before slicing it in the pan.
  5. Top with sliced green onions before serving.
