Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, combine the shredded chicken and buffalo sauce and mix well.
  3. In a blender, blend the cottage cheese, sour cream, salt, garlic, onion powder, and parsley until smooth.
Cooking
  1. Pour the cottage cheese mixture over the buffalo chicken and stir until smooth.
  2. Spray a medium-sized oven-safe baking dish with cooking spray and transfer the mixture into the dish. Top with additional cheddar cheese.
  3. Cover with foil and bake for 20 minutes or until warmed through.
  4. Remove foil and broil for 3-4 minutes until cheese is bubbly and golden brown.
Serving
  1. Garnish with green onions, bleu cheese, or ranch dressing on top; serve with pita chips, celery, tortilla chips, or Fritos.

Notes

This dip can adapt to a crockpot method; combine ingredients in a crockpot on low for 1-2 hours, then add cheese and garnish prior to serving.
