Preparation
- Preheat the oven to 350°F (175°C).
- In a large mixing bowl, combine the shredded chicken and buffalo sauce and mix well.
- In a blender, blend the cottage cheese, sour cream, salt, garlic, onion powder, and parsley until smooth.
Cooking
- Pour the cottage cheese mixture over the buffalo chicken and stir until smooth.
- Spray a medium-sized oven-safe baking dish with cooking spray and transfer the mixture into the dish. Top with additional cheddar cheese.
- Cover with foil and bake for 20 minutes or until warmed through.
- Remove foil and broil for 3-4 minutes until cheese is bubbly and golden brown.
Serving
- Garnish with green onions, bleu cheese, or ranch dressing on top; serve with pita chips, celery, tortilla chips, or Fritos.
Notes
This dip can adapt to a crockpot method; combine ingredients in a crockpot on low for 1-2 hours, then add cheese and garnish prior to serving.
