Preparation
- Line a loaf pan with parchment paper, leaving some of the paper hanging over the edges.
- In a large bowl, add almond butter, chocolate protein powder, almond flour, maple syrup, vanilla extract, and salt. Mix until evenly combined. If too dry, add extra maple syrup.
- Add mini chocolate chips and mix again until well distributed.
- Transfer the dough to the loaf pan and press it down evenly; optionally, press extra chocolate chips into the top.
- Refrigerate for 30 minutes or freeze for 5-10 minutes to set.
- Lift the parchment paper to remove the dough from the pan and slice into 8 bars.
- Store in a sealed container in the refrigerator for up to 1 week or in the freezer for up to 3 months.
Notes
These protein bars are versatile, lower in sugar compared to traditional brownies, and make for great snacks on the go. Use natural almond butter for a creamier consistency and adjust the sweetness based on preference.
