Preparation
- Preheat the oven to 350 degrees F.
- Spray an 8×8 square baking dish with nonstick spray and sprinkle a bit of sea salt on the bottom.
- Dump the corn muffin mix into a medium bowl and smooth out any lumps with a fork.
- Combine all other ingredients into the bowl and whisk until smooth.
- Allow the mixture to sit for 5 minutes.
Baking
- Transfer the batter into the prepared baking dish.
- Bake for 45 to 50 minutes until a tester comes out clean, checking after 35 minutes and tenting with foil if over-browning occurs.
- Remove from the oven and let the cornbread sit for 5 to 10 minutes.
- Cut into squares while still warm and serve with honey butter.
Notes
For best results, allow the batter to rest fully. Serve warm with additional honey butter for a treat. Feel free to add variations such as cheese or jalapeños for a different flavor.
