Dressing
  • 1/4 cup Olive oil Light dressing base.
  • 3 tablespoons Apple cider vinegar Brings a tangy kick.
  • 1 tablespoon Honey Adds a touch of sweetness.
  • 1/2 teaspoon Salt Essential for seasoning.
  • 1/4 teaspoon Pepper Essential for seasoning.
Toppings
  • 1/4 cup Sunflower seeds For added crunch and nutrition.

Method
 

Preparation
  1. Trim the broccoli crowns and chop them into small pieces.
  2. Grate the carrots and slice the red cabbage thinly.
Mixing
  1. In a large bowl, combine the broccoli, carrots, red cabbage, and chopped green onions.
  2. In a separate small bowl, whisk together the olive oil, apple cider vinegar, honey, salt, and pepper.
  3. Pour the dressing over the slaw mixture and toss until everything is evenly coated.
  4. Sprinkle the sunflower seeds on top and mix gently.
  5. Let it sit for about 15 minutes to allow the flavors to meld; serve cold or at room temperature.

Notes

For even more crunch, add chopped apples or bell peppers. To save time, prep the veggies a day beforehand and store them in the fridge.
