Preparation
  1. Chop the medium roasted beet and garlic into smaller pieces for easier blending.
Blending
  1. In a blender or food processor, add the chopped beet, chickpeas, lime juice, olive oil, tahini, sea salt, black pepper, and garlic.
  2. Pulse the mixture until smooth, scraping down the sides as needed. Adjust seasoning to taste and serve immediately.

Notes

For a richer flavor, roast the beet ahead of time and allow it to cool before chopping. This dip can be served with fresh vegetable sticks, pita chips, or as a spread on sandwiches. Adjust the consistency by adding more olive oil or water if needed.
