  • 2 lbs Boneless, Skinless Chicken Breasts The main protein element.
  • 1 cup Homemade BBQ Sauce or Store Bought Sauce Provides the tangy, sweet flavor.
Thickening Ingredients
  • 2 tablespoons Cornstarch Used to create a slurry to thicken the sauce.
  • 4 tablespoons Water Mixed with cornstarch to prepare the slurry.

Method
 

Preparation
  1. Prepare the sauce. If making from scratch, prepare your homemade BBQ sauce.
Cooking
  1. Lightly coat a slow cooker with nonstick spray.
  2. Place the chicken breasts in a single layer in the bottom of the slow cooker.
  3. Pour the barbecue sauce over the chicken to ensure it’s well covered.
  4. Cover the slow cooker and cook on high for 1 1/2 to 2 1/2 hours, or low for 4 to 5 hours until fully cooked.
  5. Once cooked, shred the chicken using two forks.
  6. Add the cornstarch slurry to the slow cooker and mix well.
  7. Cover and cook on high, stirring occasionally, until the sauce thickness is achieved, about 30 minutes.
  8. Mix the shredded chicken back into the sauce until well coated.
Serving
  1. Enjoy the BBQ shredded chicken on buns, in quesadillas, or over baked sweet potatoes.
  2. Store leftovers in an airtight container in the refrigerator for up to 4 days, or freeze for up to 3 months.

Notes

To enhance flavor, consider adding spices like smoked paprika or chili powder. Top with coleslaw for a crunchy texture. Let the shredded chicken sit in the sauce before serving to absorb juices.
