Preparation
- Preheat your oven to 375°F (190°C).
- Place the chicken breasts in a baking dish and season with salt and pepper.
- Pour your favorite barbecue sauce over the chicken, ensuring it’s well coated.
- Cover the dish with aluminum foil and bake for 25-30 minutes, or until the chicken is cooked through (internal temperature of 165°F or 74°C).
- Remove the chicken from the oven and let it rest for a few minutes.
- Shred the chicken using two forks, mixing it with the barbecue sauce in the dish.
Assembly
- While the chicken cools, toast the buns in a skillet or oven until golden brown.
- Assemble the burgers: place the shredded BBQ chicken on the bottom bun, add thinly sliced onion, cabbage, pickles, and coleslaw mix if desired, then top with the other half of the bun.
- Serve immediately and enjoy!
Notes
For best results, marinate chicken in barbecue sauce for a few hours before baking. Use a slow cooker for different texture, and add jalapeños for a spicier kick.
