Preparation
  1. Preheat your grill to medium-high heat (about 375°F or 190°C).
  2. Season the chicken breasts with salt and pepper.
Cooking
  1. Grill the chicken for 6-8 minutes per side, or until the internal temperature reaches 165°F (75°C).
  2. Remove the chicken from the grill and let it rest for 5 minutes.
  3. Slice the grilled chicken into strips.
Assembly
  1. In a bowl, layer the cooked brown rice or quinoa as the base.
  2. Add grilled chicken strips on top.
  3. Top with sliced bell peppers and red onion.
  4. Drizzle with barbecue sauce and garnish with cilantro and lime wedges.
