For the Skewers
  • 40 pieces large raw shrimp The main protein for the skewers, known for their delicate flavor and texture.
  • 1 spray oil spray Prevents sticking on the grill, ensuring even cooking.
  • to taste fresh cracked pepper Adds a touch of spice and complexity to the shrimp.
  • sesame seeds sesame seeds Optional for garnish, adding a nutty flavor and visual appeal.

Method
 

Preparation
  1. Combine the mayo, scallions, sweet chili sauce, and sriracha sauce in a small bowl. Set aside.
  2. Soak wooden skewers in water for at least 20 minutes (or use metal ones).
  3. Lightly season shrimp with fresh cracked pepper.
  4. Place 5 shrimp on each of the 8 skewers.
Cooking
  1. Heat a clean, lightly oiled grill to medium heat, around 350°F (175°C).
  2. Add the skewers to the grill and cook for about 6 to 8 minutes total, turning until the shrimp are opaque and cooked through.
  3. Set the shrimp aside on a platter and brush the sauce onto the shrimp.
  4. Garnish with scallions and sesame seeds, and serve immediately.

Notes

For best results, marinate the shrimp in the sauce for 30 minutes before grilling. Serve with lime wedges for added zest.
