Preparation
- Preheat the oven to 350°F (175°C) and grease a donut pan with cooking spray.
- Mash the bananas in a large bowl until completely smooth.
- Whisk in the egg, almond butter, vanilla, coconut oil, and maple syrup until well combined.
- Fold in the almond flour, baking powder, cinnamon, salt, and coconut sugar until just combined.
Baking
- Spoon the batter evenly into the greased molds, filling each about 2/3 full.
- Bake for 20–25 minutes, or until a toothpick comes out clean.
- Let the donuts cool before glazing.
Glazing (Optional)
- Blend coconut sugar in a high-speed blender until powdered.
- Mix the powdered sugar with some milk until smooth and thick.
- Dip the tops of the donuts into the glaze and place them on a wire rack to set.
Notes
Enjoy the donuts warm or topped with almond butter or a light glaze. They can also be frozen for up to 2 months.
