Preparation
  1. In a mixing bowl, whisk the eggs with the cottage cheese, mashed bananas, honey, whole milk, and vanilla extract.
  2. In a second bowl, combine the oat flour with baking powder and baking soda.
  3. Add the dry ingredients to the egg mixture and stir until incorporated.
Cooking
  1. Preheat a large non-stick pan over medium-low heat and grease it with oil.
  2. Pour about 3 spoonfuls of batter per pancake and cook for about 2 minutes per side.
  3. Repeat as needed until all the batter is used.
  4. Optionally, serve with honey or maple syrup and fresh fruits or nuts.

Notes

Avoid overmixing the batter, use ripe bananas, and consider using a blender for a smoother batter.
