Preparation
  1. Preheat the oven to 375 degrees F.
  2. Lightly butter a small baking dish just large enough to hold the peaches snugly.
  3. Place peach halves cut side up in the baking dish.
  4. In a small bowl, mix brown sugar, cinnamon, and salt.
  5. Evenly sprinkle the brown sugar mixture over the peaches.
  6. Dot each peach half with butter, then drizzle with vanilla, lemon juice, and bourbon.
  7. Divide the brown sugar mixture evenly on top of the peaches.
  8. Bake for 25 to 30 minutes, or until the peaches are fork tender and the tops are lightly caramelized.
  9. Serve warm with a scoop of vanilla ice cream, optionally topped with chopped nuts.

Notes

Choose peaches that are ripe but firm to avoid mushiness. Adjust the amount of brown sugar based on the sweetness of the peaches. Experiment with different spices for added flavor.
