  • 1/4 cup cilantro or parsley Fresh herbs that brighten up the salsa.
  • 2 tablespoons red vinegar Provides acidity for balance in the salsa.
  • to taste salt and pepper For seasoning as desired.

Method

Preparation
  1. Preheat the oven to 425°F for crispy chicken wings.
  2. Place the chicken wings in a large bowl, add the jerk spice blend, drizzle with avocado oil, and season with sea salt. Mix with your hands to ensure they’re fully coated.
Cooking
  1. Line a baking pan with parchment paper or foil for easy cleanup.
  2. Lay the chicken wings in a single layer on the lined baking pan.
  3. Bake the wings in the oven for 45-50 minutes until cooked through and skin is crispy, rotating the wings halfway through (around 20 minutes) for even cooking.
Serving
  1. While the wings bake, add the cherry tomatoes, garlic, jalapeño, cilantro/parsley, red vinegar, salt, and pepper to a food processor. Pulse until you reach your desired salsa consistency.
  2. Serve the salsa in a small bowl, garnish with extra cilantro or parsley. Arrange the wings on a platter and serve with the spicy salsa.

Notes

Let the wings marinate for at least 30 minutes to enhance flavor. Use a wire rack for better air circulation for even crispiness. Consider serving with celery sticks and blue cheese for a classic game-day platter.
