Coating Ingredients
  • 1 cup panko breadcrumbs Creates a light, crispy coating.

Method
 

Preparation
  1. Preheat the oven to 400°F.
  2. Slice each chicken breast into 3-4 strips lengthwise and pound them until just under 1/2-inch thick.
  3. Pat dry and season with salt and pepper.
  4. In a large bowl, combine the batter ingredients and add the chicken, tossing to coat well.
Cooking
  1. In another bowl, combine panko breadcrumbs and melted butter, then bake for 6 minutes until golden brown.
  2. Mix in the grated Parmesan cheese to the breadcrumb mixture.
  3. Pour the batter-coated chicken into the breadcrumb mixture and coat well.
  4. Place the coated chicken on a cooling rack set over a baking sheet.
  5. Bake for 18-20 minutes until the tenders are golden brown and cooked through.
Serving
  1. Serve hot and enjoy immediately for the best texture and flavor.

Notes

Add a sprinkle of additional Parmesan on top before baking for a cheesier finish. Marinate the chicken strips for deeper flavor if desired.
