Preparation
- Preheat the oven to 400°F.
- Slice each chicken breast into 3-4 strips lengthwise and pound them until just under 1/2-inch thick.
- Pat dry and season with salt and pepper.
- In a large bowl, combine the batter ingredients and add the chicken, tossing to coat well.
Cooking
- In another bowl, combine panko breadcrumbs and melted butter, then bake for 6 minutes until golden brown.
- Mix in the grated Parmesan cheese to the breadcrumb mixture.
- Pour the batter-coated chicken into the breadcrumb mixture and coat well.
- Place the coated chicken on a cooling rack set over a baking sheet.
- Bake for 18-20 minutes until the tenders are golden brown and cooked through.
Serving
- Serve hot and enjoy immediately for the best texture and flavor.
Notes
Add a sprinkle of additional Parmesan on top before baking for a cheesier finish. Marinate the chicken strips for deeper flavor if desired.
