  • 2 cups shredded cooked chicken The main protein in the taquitos.
  • 1 cup pepperjack cheese Melts wonderfully for a bit of a kick.
  • 8 pieces flour tortillas The wrapping for your taquitos.

Method
 

Preparation
  1. Preheat your oven to 425 degrees F and line a baking sheet with parchment paper.
  2. In a large bowl, mix together the cream cheese, salsa, lime juice, cumin, chili powder, onion powder, garlic, cilantro, and scallions until well combined and creamy.
  3. Add in the cooked chicken and pepperjack cheese; stir to thoroughly combine.
  4. Heat the tortillas in the microwave between two paper towels until soft enough to roll.
Assembly and Baking
  1. Spoon 3 tablespoons of the chicken mixture onto the lower third of a tortilla and roll tightly.
  2. Place seam side down on the baking sheet.
  3. Spray the tops lightly with cooking spray and sprinkle with salt.
  4. Bake for 15 to 20 minutes or until crisp and golden.
Serving
  1. Serve with salsa, sour cream, or guacamole for dipping.

Notes

Warm tortillas before use to prevent tearing. Don't overfill to avoid spills. Use parchment paper for crispiness. Customize fillings as desired.
