Preparation
  1. Preheat the oven. Set your oven to 350°F to prepare for baking.
  2. Prepare baking sheets. Line two large, rimmed baking sheets with parchment paper for easy cleanup.
  3. Slice the carrots. Thinly slice the carrots into 1/8-inch thick rounds.
  4. Blot the carrots. Place the carrot slices on paper towels to remove excess moisture, ensuring they’ll bake crispy.
  5. Toss with seasoning. In a large bowl, mix the carrot slices with olive oil, salt, pepper, and garlic powder until evenly coated.
Cooking
  1. Arrange carrot slices. Spread the carrot slices in a single layer on the prepared baking sheets, making sure not to crowd them.
  2. Bake the chips. Place the baking sheets in the oven and bake for 15-20 minutes, flipping halfway through until browned on the edges and crispy.
  3. Check for doneness. If some chips are crisp and others are not, remove the finished ones and continue baking the remaining chips for a few extra minutes. Watch closely to prevent burning.
Serving
  1. Cool down the chips. Let the chips sit on the baking sheets for 5 minutes at room temperature to firm up as steam escapes.
