Preparation
- Preheat the oven to 400°F.
- Place the cherry tomatoes, mushrooms, and garlic in a greased 9x13 oven-safe baking dish.
- Drizzle with olive oil and sprinkle with salt, pepper, and red pepper flakes. Toss to coat.
- Push the tomatoes and mushrooms to the sides and place the Boursin in the middle of the dish.
Baking the Ingredients
- Bake in the preheated oven for 30 minutes, until tomatoes burst and cheese melts.
Cooking the Pasta
- While the vegetables are baking, cook the rotini in salted boiling water until al dente. Drain and reserve 1 cup of cooking water.
Combining Ingredients
- Once the Boursin and tomatoes are done, stir in the spinach until wilted.
- Combine the cooked pasta with the sauce in the baking dish, adding reserved pasta water for desired consistency.
- Stir in the grated Parmesan.
Serving
- Serve immediately with shaved Parmesan on top.
