  • 1/4 teaspoon crushed red pepper flakes Offers a mild heat to the mix.
Pasta and Cheese
  • 12 oz dried rotini A short pasta that holds sauce well.
  • 1 8-oz Boursin garlic and herb cheese Creates a creamy, flavorful sauce.
  • 2 cups fresh spinach Adds a fresh, bright element.
  • 1/2 cup grated Parmesan For a cheesy finish and added flavor.
  • 1/4 cup shaved Parmesan Used as a topping for garnishing.

Method
 

Preparation
  1. Preheat the oven to 400°F.
  2. Place the cherry tomatoes, mushrooms, and garlic in a greased 9x13 oven-safe baking dish.
  3. Drizzle with olive oil and sprinkle with salt, pepper, and red pepper flakes. Toss to coat.
  4. Push the tomatoes and mushrooms to the sides and place the Boursin in the middle of the dish.
Baking the Ingredients
  1. Bake in the preheated oven for 30 minutes, until tomatoes burst and cheese melts.
Cooking the Pasta
  1. While the vegetables are baking, cook the rotini in salted boiling water until al dente. Drain and reserve 1 cup of cooking water.
Combining Ingredients
  1. Once the Boursin and tomatoes are done, stir in the spinach until wilted.
  2. Combine the cooked pasta with the sauce in the baking dish, adding reserved pasta water for desired consistency.
  3. Stir in the grated Parmesan.
Serving
  1. Serve immediately with shaved Parmesan on top.
