Preparation
- Preheat the oven to 400°F.
- Place cherry tomatoes, mushrooms, and garlic in a greased oven-safe 9x13 baking dish.
- Drizzle olive oil on top and sprinkle with salt, pepper, and red pepper flakes. Toss to coat.
- Push the tomatoes and mushrooms to the sides and place the Boursin round in the middle.
Baking
- Bake for 30 minutes until tomatoes burst and cheese melts.
Cooking Pasta
- While baking, cook the pasta in salted boiling water until al dente, then drain while reserving 1 cup of the cooking liquid.
Combining
- Stir in spinach after baking until wilted and mixed into the sauce.
- Combine cooked pasta with the sauce in the baking dish, adding reserved pasta water as needed for consistency.
Serving
- Stir in grated Parmesan and serve immediately with shaved Parmesan on top.
Notes
