  • 12 oz dried rotini A short pasta that holds sauce well.
  • 2 cups cherry tomatoes Adds sweetness and juiciness to the dish.
  • 8 oz sliced cremini mushrooms Brings an earthy flavor profile.
  • 3 cloves garlic Adds aromatic depth and warmth.
  • 2 tbsp extra-virgin olive oil Enhances the richness of the dish.
  • 1 tsp coarse salt Essential for seasoning to taste.
  • 1/2 tsp black pepper Essential for seasoning to taste.
  • 1/4 tsp crushed red pepper flakes Offers a mild heat to the mix.
  • 1 round Boursin garlic and herb cheese Creates a creamy, flavorful sauce.
  • 4 cups fresh spinach Adds a fresh, bright element.
  • 1/2 cup grated Parmesan For a cheesy finish and added flavor.
  • 1/4 cup shaved Parmesan Used as a topping for garnishing.

Method
 

Preparation
  1. Preheat the oven to 400°F.
  2. Place cherry tomatoes, mushrooms, and garlic in a greased oven-safe 9x13 baking dish.
  3. Drizzle olive oil on top and sprinkle with salt, pepper, and red pepper flakes. Toss to coat.
  4. Push the tomatoes and mushrooms to the sides and place the Boursin round in the middle.
Baking
  1. Bake for 30 minutes until tomatoes burst and cheese melts.
Cooking Pasta
  1. While baking, cook the pasta in salted boiling water until al dente, then drain while reserving 1 cup of the cooking liquid.
Combining
  1. Stir in spinach after baking until wilted and mixed into the sauce.
  2. Combine cooked pasta with the sauce in the baking dish, adding reserved pasta water as needed for consistency.
Serving
  1. Stir in grated Parmesan and serve immediately with shaved Parmesan on top.

Notes

For best results, use quality ingredients and ensure the tomatoes burst and the mushrooms are tender but not mushy. Customize with proteins or veggies as desired.
